Differences in viscosity of normal pH Sm and Ld muscle homogenates (lack of changes and significantly increase after 48 hours p.m., respectively) and in viscosity of abnormally high pH Sm and Ld muscle homogenates (significantly lower ap parent viscosity values of Sm muscle homogenate than that of Ld after 24 and 48 hours p.m.) can influence the qualityof processed products from those muscles.
